Getsuyoubi, the day that "gets you". Moon = moonday = monday.
火曜日
Tuesdays KAnt do anything. Might as well chuck them them into a fire.
水曜日
Wednesday is the day my SUIt got soaked. Water and Wednesday share the W.
木曜日
The day I was MOCKU-t by a tree.
金曜に
My spending of gold in the bar on Fridays is akin to no one elses. I get smashed!
土曜日
Douyoubi. Im really hungover, lying on the soil/ground. People keep walking up to me asking me "dou desuka?"

Nichiyoubi. Is the Sun day. Has ni nichi.
Is it cheating if you use the Japanese readings as they appear in other words with the same kanji? That way you can study other words at the same time.
月 - The Japanese word for month, GETSU. This is the kanji for month too. And Monday is sort of a play on MONTH-DAY so there you go!
日 - One of the Japanese words for day, NICHI (and the kanji for day, but as a pictograph it is a picture of the sun). SUN-DAY!
The others are harder because they deal with the five primitive elements fire, water, wood, gold, and earth, which are less connected to the actual name of the day than the others. I mean, I vaguely recall that the names of days in English are connected to the names of Mythological gods. But I couldn't tell you the gods' names.
金 - One of the Japanese words for gold, KIN. The day on with you receive your GOLD/MONEY is Friday (at most companies). This is maybe a bad one because the most common word using this kanji is お金 which doesn't use the KIN reading (KIN is much rarer, I think).
Wednesday is sometimes known as "hump day" in English but I have a hard time connecting it to "water."

Now, there is the "Movie Method" where you can combine the primitives and a movie scene to help create a mnemonic for both the kanji and the onyomi at once.
For example: Ka カ カtana from Kill Bill. 火 The scene where Bill and Kiddo are by the FIRE and he tells the story.
kin キン キンgkong from King Kong. 金 Picture Kong with a umbrella crown, as the King, being held by two drops of gold chains.
suiスイ スイ(sweet tea for ET) from ET. 水 Just picture ET and Elliot in a tub full of water.
doeド rolling in ド from Ocean's 11. It's the scene with the explosives guy covered in DIRT.
ゲツ, ニチ, and モク have too few kanji for their on yomi so just attach a pronunciation to the mnemonic/story used for the regular kanji.
Nietzscheニチ stared in the SUN and the SUN stared back.
The MOON gets you ゲツ up at night.
Sit under the TREE to feel mo' kool モク.
