Yeah, those are probably the same people who single-handedly make profit for Capcom at the arcades, lol. I'm not good with a stick anyway. I've had few opportunities to use a stick and the few times I did they were half broken. 
On the challenge mode... I would just recommend practicing focus/dashing over and over. Do it until it becomes second nature. Then you'll be able to do whatever move you want after. One thing I did with Fei Long was Fierce Punch -> Burning Kick (rekka something) -> focus cancel -> dash.... over and over.
Once I got that down. I just did the entire combo whether it connected or not. I found that if I waited for hit confirmation on combos that require perfect timing, as opposed to feeling, I just missed the opportunity to finish the combo when it came up. I call it plowing. Even if the dummy (dan) starts blocking keep doing the combo. Otherwise you'll end up in a situation where you keep missing the very last hit.
Also, looking away from the screen from time to time helps to. Try to do the combo with your eyes closed, lol. It's sounds silly, but it I do it. I try go by sound alone. If nothing, it helps rid you of the need for visual confirmation. It's either about feeling or timing.
It took me about 4 hours total, with a break in between, to do Fei Long entire hard trial. Then I went through it again finished in under 30 minutes. I also use a 3 punch button. There's no way in hell I would even consider doing 3 punches on an Xbox controller, lol.

For ryu, I guess try Fierce Punch (or strong punch... I'm more a ken guy
) -> Dragon Punch -> focus dash over and over. Make sure to jump over the dummy and practice on the other side as well.
If you're just having trouble doing his ultra alone I would recommend doing the Hadoken input over and over but not pressing punch. Then input the ultra command slowly. Repeat on both sides. Even the best (excluding robots who have honed their skill playing SFA/SFEX nonstop for the last 10 years) have trouble inputing the qcfx2 motion... sometimes.
If you haven't been hammering at SF for last few years the best advice I could give to you is to give it time and take breaks every few minutes (to let things soak). I wonder if anki works for Street Fighter.
