Here are my favorites (in order of preference)
1) 5 centimetres a second (perfect!)
2) toki wo kakeru shoujo (very very good but the time travel premise was a little otaku)
3) Memoirs of a teenage Amnesiac (Quite good although first half pretty slow)
4) Innocent Love (Some very good moments but waaay over the top sometimes)
I guess what I liked about them were
*very good voice acting
*1,2, and 4 had awesome soundtracks
*with the exception of 4, emotions/events for the most part aren't overstated
*More or less realistic stories about human emotion
I've watched Makoto Shinkai's other stuff but for the most part it was too otaku for me... I'm having a really hard time finding other TV/movies that I like. If you guys/gals can think of anything that might fit my tastes I would be forever grateful.

While I've only seen your #1 and #2, and I can't really remember them that well -- it seems that you like sort-of serious love stories that are also pretty lighthearted.
The only thing that I've seen that seems to fit is 彼氏彼女の事情, "His and Her Circumstances."
Now, I haven't seen this one in many, many years; but it seems I enjoyed it.
It's about the 2 smartest kids at this high school getting together. Except the girl is a total mess when she's not pretending to be miss perfect. I watched it in my high school days, and I liked it because I could relate to the characters = more or less realistic story about human emotion? Problem is it just randomly -ends- and so you've gotta read the manga to get the ending.
If you're a guy... the manga I''s might be a good one. It's about a guy who has this huge crush on this one girl, and all the stuff he goes through trying to get with her. It's light-hearted, but I also -was- the main character IRL at the time I read it, so that might have been something.
Sorry I can't really think of anything else that fits into that 'type.'

Summer Wars was a great film. It was the same guy who did the girl who leapt through time.

Will need to watch Memoirs a some point, if for no other reason than it has Maki in it.
Currently airing Taisetsu na koto wa subete kimi ga oshiete kureta is pretty good, only saw first 3 atm, need to download the others.
Teacher accidentally sleeps with one of his new students and she develops an obsession for him and sets out to destroy his life to get to him.
Good cast, the whole soundtrack is by pink.. which is well.. hmm. yh..

Watch the rest of Makoto Shinkai's works. Some really good stuff right there. 5 Centimeters Per Second is okay, but it's probably one of my least favorite of Shinkai's. I think the central theme doesn't really hit home for me.
Someone already recommended Summer Wars, but I'll re-recommend it.
Also, I dunno if these will fit your bill, but also check out Metropolis and Steamboy. Different genre, but fairly well put together movies.

You should deffo check out Summer Wars. It's a nice light hearted anime in the sea of deep intense stuff, but it has it's fair share of action and drama as well! I loved it.
