Well, I think my favorite is rather obvious.

I like the 瓦 series, as well as other kanji for the metric system (and stuff).
I'm quite partial to Ton...for no real reason...which is what I use in my avatar.

陰 since it looks like the stroke from 今 looks like it's going behind the rising cloud.
愛 just because its a beautiful word and the kanji looks beautiful too.
鳥 when it's drawn with a real brush can look awesome.
I love the way that any of the "gates" look e.g. 門 even though I have trouble drawing them still.
水 and 雨, bah there's just too many to choose from.
