I love Japanese food and sometimes like to cook it. I thought it may be fun to share some recipes 
The classic 味噌汁(Miso soup) with carrot and daikon:

Miso Soup (with carrot & daikon)
3-4 pers (or 2 big bowls)
wakame わかめ
1/3 silken tofu (of standard size block) 日本豆腐
6 shiitake (sliced) しいたけ
1/3 medium carrot (super thinly sliced) にんじん
1 cup (small)cubed daikon 大根
1 1/2 tbs miso (red) 味噌
1 1/2 tsp hon dashi* (powder) だし粉
1 tbs mirin みりん
thinly chopped scallions (to garnish) 長葱
water (small pot)
1. Soak wakame in water to revitalize (if needed, cut into bitesize pieces). Cut tofu into 1.5 cm cubes.
2. Bring water to a boil in a small pot, then add dashi powder, add carrot and daikon and boil till carrot and daikon begin to soften slightly (about 8 min.)
3. Lower heat and add shiitake and tofu and mirin. Gently heat for couple minutes.
4. Switch off heat and add miso and allow to dissolve. Garnish with chopped scallions and serve!
*Ofcourse it's best to make fresh dashi with かつおぶし and a piece of 昆布

Especially not in Sweden where we seriously lack fitting ingredients. (Shiitake is so extremely expensive here...)
