1. I wish I could tell you. I don't think it's necessarily a bad idea, as I also want to learn German, so this thread is relevant to my interests.
2. I don't know why you would want to download .anki files with sentences already in them, unless it was something like KO2001, or something else, with pre-determined routes "i+1?". I've always understood the sentence method being your own choosing of sentences.
3. Sorry, I can't answer this. But depending on how much effort you put into it, maybe a few months to a year to get a pretty decent handle on it?

I feel the same as you and plan to learn Spanish and French later, but my real intrest is in Japanese. If I'd known about some of the learning methods and tools that I know about now... Well I plan to make up for lost time, but not just with laguages. A lot of the tools in the AJATT method apply to other subjects as well.

Si me lo permites, ya que entiendes el español, te lo comento en este idioma que me es más sencillo y luego hago un resumen.
1. Es una buena idea, si es lo que quieres hacer, no hay más que hablar. Lo bueno que tiene el italiano es que es de raices distintas al japonés y eso hace más difícil que se mezclen los conceptos de ambos idiomas.
2. Es muy complicado encontrar algún mazo (mazo=deck, tal y como lo traduje) con frases en otro idioma. Lo máximo que podrías encontrar sería un libro digitalizado y tratar de copiar y pegar frases de ahí y usar un programa TTS para la pronunciación, aunque si se trata de italiano no creo que haya muchos problemas. Te lo digo porque yo he tratado de conseguir alguno en francés y me ha resultado imposible, ahora estoy haciendo lo que te he dicho, coger frases de libros y copiar y pegar para posteriormente aprenderlas.
Yo tampoco soy un entusiasta de perder tiempo haciendo esto (a pesar de que muchos lo consideren una manera más de aprender la frase), pero es complicado encontrar recursos. Quizá sacar frases de novelas y ese tipo de cosas tampoco estaría mal
3. Algunos meses, el italiano no debería ser demasiado difícil para un hispanohablante, aunque no lo conozco lo suficiente como para tener una certeza absoluta.

I'm studying Italian as well and am also a Spanish speaker.
All I could really get for my deck, as far as cards with Audio, were lists and sentences off Smartfm and using the importing plugin with Anki. I only got a few hundred though, very few in my opinion.
Other than that though I'm just going along copying sentences I see. Honestly, I'd rather not because its so time consuming and since there are so many more resources for Japanese I have been spoiled.
