Video game stuff (probably nothing new to anyone who watches videos about games...):
Peanut Butter Gamer - Does video game videos... His let's plays are pretty fun to watch.
ProJared - Does video game videos... Probably the only LPer I can watch play horror games, since he constantly jokes about their design and doesn't fake being scared constantly. His review videos, while relatively infrequent compared to other content, are constructed very well and are such that I actually take his opinion (and not just the reviewed points) into account when deciding whether to buy a game or not (that is, I understand in what areas our opinions align and trust that he's not lying for sponsorship).
Caddicarus - Mostly reviews and top tens; 'reviews' of horrible, 'why would you ever buy this' games are fun; all other reviews are incredibly informative. I like video game top tens when they actually have reason (or at least decent production) behind them.
brutalmoose - comedic reviews (and 'reviews') on older video games. Like any comedic content, you may or may not enjoy these videos (or most of any of the things I'll recommend).

Think Fact - kinda like VSauce, but more focused on one topic, instead of spreading out really far from the initial question.

People ranting about stuff, especially SJWs and bad science (a.k.a. If you are sensitive to politics or hate hearing about what kind of crap goes on in the world that isn't directly tied to world leaders, don't watch any of these. Except maybe Thunderf00t's science videos; they should be cool to anyone who likes science, considering that's his profession.):
Thunderf00t - Science, some history, and a lot of stuff about radical feminists, other extreme progressives, and creationists.
TL;DR - Ripping through the bad science used in current political propaganda (especially by extreme progressives); need a good video on how the 'gender wage gap' is actually a 'gender earnings gap' or why the recent FDA approval for the 'female viagra' was a horrible mistake (hint: the drug is ineffective and extremely dangerous), that actually uses proper research? Watch TL;DR's videos on them.
Sargon of Akkad - Rants about things he finds idiotic (i.e. extreme progressives); these are usually very rant-like, so more of a catharsis channel for me (though he does reference things, it's not done as rigorously as on TL;DR's videos). Likes ancient history a lot (thus the name), so some interesting videos on history, but no where near the majority; side channel (Ancient Recitations) is him reading old texts (that have been translated? Probably, but haven't had time to listen to more than one of these).
