What I want to do:
Take a text version of a JP book, have it analyzed for word frequency, remove the vocab that I already know, then automatically create srs cards from the remaining vocab (with useful example sentences.)

REMOVE THE VOCAB I ALREADY KNOW:
Is there any software that can do this yet??? I want something that can remove every instance of vocab that I know from a text file. (And thereby be left with a list of only vocab that I don't know.)

Automatically create cards with useful example sentences:
Is there a good one for this yet?

A "text version" as in a .txt file? Or a "text version" as in a hardcopy book? I don't about that part. I'm sure someone else can answer that better than I can either way, but if you have it analyzed and have a vocab Anki deck, you could put both in Excel and do some comparisons. Or you could just have Anki not accept duplicates when you're importing, but you'll probably get a lot of weird stuff along with everything else.

As for your question as a whole, it seems unlikely that software exists, but I could be wrong.

For "Automatically create cards with useful example sentences", try Epwing2Anki.
