I switched to recognition only about halfway through RtK and learned the meanings just fine. I'd say you don't have to write them down at all if you're just concerned with learning the meanings.

Only the paperwhite officially supports Japanese. It's impossible to buy Japanese books for any kindle older than the paperwhite.

You need a Japamese IP address to buy from the kindle store. At least in my experience. A VPN or proxy can do that for you.

In my opinion you should try to get into reading native materials as soon as possible. The thing that's probably keeping you from that is low vocabulary and coming from that low kanji reading ability....
