Can anyone recommend a good freeware program for recording voice (for practice) and encoding it to mp3?

Yep, It's what I use for voice practice.
Recording yourself and listening back is real good to see where your pronunciation is a little off, it's even better if you have a reading of the same text by a native speaker to compare (I use breaking into japanese lit. Audio files). I found after recording myself for a while that my で often sounded like "di" when it was not a particle.

Oooh, salmon, thank you good sir.

A bit slow, but thanks for the recommendation everyone! Audacity is working great so far.
