「字幕」, then.
"Subtitle" refers to dialog, usually in a different language --or a second title on a book.

"Caption" refers to text on a movie screen in the same language as the movie, either notes like "Several years earlier..." or dialog. --or the text below a picture.

In American usage at least, "caption" is used to describe a transcription of the audio for hearing-impaired persons and "subtitle" for a transcription of a thick accent or translation of a foreign language. There isn't a word specifically meaning "transcription for language learners."
