In the kanji for goods 品 there are 3 "mouths." The top one is more horizontal and the bottom 2 are more vertical. Does it matter if I write them as equal squares?

Well as long as it looks right you shouldn't stress over things like this.

Since reaching the half-way mark, I have started writing my kanji on squared paper, and it helps with proportions immensely.

Basically a general rule is, primitives that appear at the top or bottom do get squished a little. But don't worry about it too much for now, just worry about remembering the kanji.

You don't have to, but the kanji looks a lot better if it's squished "properly".
