Share you Japanese Recipes - Musashi - 2009-07-17

I love Japanese food and sometimes like to cook it. I thought it may be fun to share some recipes Big Grin

The classic 味噌汁(Miso soup) with carrot and daikon:
----------------------------------------------------------------------------------------
Miso Soup (with carrot & daikon)
3-4 pers (or 2 big bowls)

wakame わかめ
1/3 silken tofu (of standard size block) 日本豆腐
6 shiitake (sliced) しいたけ
1/3 medium carrot (super thinly sliced) にんじん
1 cup (small)cubed daikon 大根
1 1/2 tbs miso (red) 味噌
1 1/2 tsp hon dashi* (powder) だし粉
1 tbs mirin みりん
thinly chopped scallions (to garnish) 長葱
water (small pot)

1. Soak wakame in water to revitalize (if needed, cut into bitesize pieces). Cut tofu into 1.5 cm cubes.
2. Bring water to a boil in a small pot, then add dashi powder, add carrot and daikon and boil till carrot and daikon begin to soften slightly (about 8 min.)
3. Lower heat and add shiitake and tofu and mirin. Gently heat for couple minutes.
4. Switch off heat and add miso and allow to dissolve. Garnish with chopped scallions and serve!

*Ofcourse it's best to make fresh dashi with かつおぶし and a piece of 昆布

I love Japanese food too, but not when I'm cooking it Tongue Especially not in Sweden where we seriously lack fitting ingredients. (Shiitake is so extremely expensive here...)

I do have my girlfriend send me Coco Ichibanya curry bags to me from Japan Big Grin So easy to make, so extremely delicious.

Is that that just add carrots and potatoes curry? Noooooo don't eat that! That stuff is toxic as can be, hehe
Sorry, Japanese curry is one of the worst curries, I think it was copied from Indian curries in England (or the other way around).
My mom’s Malaysian and we always have curry, you need some REAL curry:
----------------------------------------------------------------------------------------
Malaysian Curry

1 big onion
4 garlic cloves
8 red chillies (de-seeded) (hotter: 4 fresh chillies and 4 dried chillies)
3 cm piece fresh ginger
3 cm piece fresh galangal (optional)
belacan (optional)
3 tomatoes quartered (or 4 small ones)
1 pack curry paste
1 1/2 tsp ground tumeric
1 can coconut milk (little less)
4 stalks lemongrass (bout 10 cm each)
1 lime (juiced) (or 3/4 small lemon)
3 tbs soysauce
2 1/2 tbs sugar
4 big chickentighs (5 big drumsticks)
3 med-big potatoes
some chicken stock
salt
oil
corn starch

1. de-bone chicken, cut into pieces, fry in skillet until lightbrown, put aside.
2. cut onion into pieces and fry 2/3 of onion in oil until translucent.
3. meanwhile mix garlic, (fresh)chillies, ginger/galangal, 1/3 of onion in foodprocessor and add to onions and stirfry.
4. add curry paste, tumeric, (belacan) and stirfry, then add tomatoes and potatoes and stir.
5. add coconut milk, soysauce, sugar, salt, lemongrass, chicken stock and cook till boiling
6. add chicken back (with all the juices) and rest of chillies (cut into pieces)
7. add lemon juice and cook for about 45 min. till potatoes are soft
8. thicken with little corn starch if needed (although malaysian curry has a rather runny sauce like most southeast asian curries)

Coco Ichi curry.....mmm..... Great, now I'm going to start having withdrawls again Tongue I can get some random brand of curry roux at the grocery, but it's really just not the same. ....Still, random-brand curry is better than no curry at all...I should make some soon.

As for Japanese recipes, one of the best places I've found for them is http://www.justhungry.com (and its bento-specific site, http://www.justbento.com). Recently I've started looking up Japanese recipes on Japanese sites, which is kind of fun.

Step 1: 「X食べたいな、、」とゆって
Step 2:しばらく待つ
出来上がり!

Having a gf who likes to cook is great. I can actually cook JP food pretty well by myself (I used to be a chef at a jp restaurant), but I'm teh lazy.

Indeed, but that was ages ago, Japanese curry is unique and it's definitely the best curry in the world. In fact, I hated curry until I ate the Japanese kind (Curry is actually a national dish in Japan), but now that I love Japanese curry, I've learned to eat the other kinds.

Nice tip for the site, looks fun to read with lots of pictures and big font, not to mention good study material for all thing food related. *bookmarked

Japanese curry is indeed terrible, cannot believe that it is even mentioned, but whatever takes your fancy. It was origonaly taken from English curry about 60 years ago. Curries in England are now nothing like that but still not the real deal. Best curry in the world is south-indian food in Singapore, but that is just my opinion.

okinawan goya (which most azn supermarkets have) dubbed 'bitter melon'
tofu, 1 blok

stir fry that ish, add 1 egg just at the end:

delicious.
