I never did see anyone mention comfort as a factor (just the idea of kana input makes my hands hurt, though I haven't bought one to be sure), but then again, that might have been in the post that mentioned different keyboard layouts (DVORAK and such), and my eyes glazed right over that.
I think that will depend on factors such as their work nature (e.g. typist vs gardener), flexibility, adaptability and most important factor, whether they feel it is of any benefit to change at all, while some people would love to stay in their comfort zone all the time.  

Some people have the dexterity to use both hands (left and right hands with equal skills: ambidexterity) and/or choose to activate both hemispheres of their brain-cells.

Heheheh... I can "smell" through the bits and bytes. Blush  Sure thing, most of the Master/Chief Chefs recruited don't even need to know the Japanese language to work in Japan, some are headhunted through the grapevines or personal contacts.  It depends on the restaurant/hotel owners and their business models, target clientele and other X-factors like "human chemistry", so it is possible to get a foothold inside their kitchen, where fusion cuisine is popular in some places.

Can Japanese Actually Write Japanese (Kanji)?
The topic question itself is kind of "open and wide", subject to at least a few interpretation such as:
- Japanese Kanji names?
- Japanese Kanji words for elementary level?
- How many Kanji words would be considered that a person could actually write?
- How do the person who is conducting the street survey even know if someone is really a Japanese?

I have a Japanese friend and she sometimes forgets kanji or gets them mixed up (but these mistakes make sense, though - for example 芯 and 針 in the context of stationery.) She also gives me weird stares when I say kanji are my favourite part of Japanese, haha. She's really helpful and has taught me a lot though!

ps. so that's what "bribe" and "graft" are for huh!

I switched to a swipe keyboard (available in Multiling's replacement) on my S3; it's interesting, but it's taking a while to get used to. I think my biggest issue with it is that, sometimes, I fail to flick far enough for it to register as a different character, and I just get the face one. Remembering the location of each tile, as well as direction I have to flick, is steadily becoming easier.

I don't usually have any trouble, but I only use the numbers occasionally, and it always feels like a bit of a stretch, despite having large hands; granted, I'm currently using a flatter keyboard (from my bed, as I can't sit) and it's significantly easier, so maybe it's just my usual keyboard.
I usually switch to the number pad when programming or making spreadsheets, because it feels easier; I can't tell whether the time I save using the pad counters the time it takes to switch between it and the normal keyboard though...

I actually get asked to spell-check a lot by friends and family, so I've gotten used to it; I know what you mean though, suddenly being put on the spot makes your confidence go straight out the window.
