One the screen, it would have two sections. On the left, is a list a words you put in and on the right is just an empty text box. In the text box, you write sentences and when you wrote a word that is on the list in the left section, it gets grayed out. You keep writing until all the words in the left sections are grayed out.
This could be great for practicing writing sentences after learning a few new vocabulary words from Genki or JP books you read. Tho this kind of program might be more difficult for Japanese, I could see someone making this for English or Spanish.
I'm curious if anyone knows if there is this kind of program out there.

Well if you are just practicing a few specific words, wouldn't you know when you have written them? Would the program really need to explicitly let you know "yep, you just used that word that you wanted to use" ?
A program like that would be really simply to write, with the exception of it needing to conjugate stuff.

Weaving a random set of words into a single idea or argument would certainly deepen your understanding of the chosen words.
After a certain point in a language (having learned all Greek and Latin roots, for example) learning words becomes fairly easy and writing out sentences becomes unnecessary. At which point I imagine this method would be reserved for unique words or words to be used in writing and daily life.

I don't think that program exists. But there's always writing out a little word bank on a sheet of paper, and crossing the word off as you use it.
