Should I keep going or should I do flashcards that also have recognition too?

EDIT: For brevity, I'll only answer the question you actually asked in this first, shorter paragraph: yes, I think you should do recognition cards (exclusively or mixed with production, your choice).

Personally, I changed the card layout to be recognition, since that was more important to me (and since I wasn't producing the written word in reviews, I had a harder time recognizing the word, even if I knew it's meaning and pronunciation).
It's not too hard to do, since Anki has a tool that makes the tags when adding a field to a card, so just remove the bits you don't want and then click 'add field' to put in what you need. Just switch things around until it looks good to you.
I don't even remember needing to do that much, but I don't know if the deck has changed any since I downloaded it.

I recently downloaded the Core 6k Step 1 deck and I have the exact opposite problem. The order is screwed up so instead of seeing a new word, then a production card, then a listening card, then a sentence, etc, it's literally 50% example sentences for two days, then 75% reading recognition for a day, etc etc. It's stupid hard to study this way!

It should work correctly if you have Anki set to show them in order of appearance. At least, it did for me when I tried it.
Also, the OP's problem is that they are using the 'Core 2k/6k Optimized Japanese Vocabulary' deck which, by default, is production only (it doesn't use five cards per word like the Step decks, which are closer to the way they're presented on iKnow/smart.fm) and uses cloze deleted example sentences (which doesn't really work for this deck, since the Core sentences are really bland and can often have numerous words in the blank that will fit).
They are wondering whether using only production cards is good or if they should use recognition cards.

I found what I think was causing the problem. I had the "Bury related cards until the next day" setting enabled, which meant it was throwing all listening comprehension at me. The order still seems wonky compared to Core2k though.

So I'm not really sure what I should do now. Stop optimized and start a completely new deck or continue optimized and also do another deck alongside it? What are good decks?

Just create a new production card for each note.

You can edit the layout of cards, you don't need to get a whole new deck. Just change the cards to how you want them to look.

I want to keep doing production though so how do I change the deck so I get an equal amount of recognition?

Card browser -> Select card -> Card button -> plus button on top -> format as necessary
